One of my favorite things about summer is getting a big box of cherries from the Northwest Cherry Growers delivered right to my front door. Nothing beats the taste of sweet cherries in summertime.
This year I'm baking up a recipe the whole family can enjoy. We are a food allergy family so sometimes finding recipes everyone can eat is a bit of a challenge. I recently stumbled across a dairy free brownie recipe. I tweaked it a little to take out eggs. And then I added in some fresh diced sweet cherries. This recipe is perfect!!! The brownies are nice and cakelike. And the cherries give it great flavor, almost like eating a chocolate covered cherry but in a brownie like form.

3/4 cup vegetable oil
3/4 cup maple syrup
1/3 cup soy milk
1 T. vanilla
2 cups flour
1 cup cocoa powder
1 1/2 cups sugar
2 T. baking powder
2 cups pitted, diced sweet cherries
1.) In a large bowl mix together oil, syrup, milk and vanilla.
2.) In a separate bowl mix together flour, cocoa powder, sugar and baking powder.
3.) Slowly add dry ingredients to wet ingredients.
4.) Fold in cherries.
5.) Pour into a greased 9 x 13 baking pan and bake at 350 degrees for 35 minutes.
6.) Test with a toothpick to be sure product is baked all the way through.
