Pumpkin Cheesecake

Technically there are 16 days of fall left until it is winter, so I'm not sharing this Pumpkin Cheesecake recipe too late.  Other food bloggers are just sharing Christmas recipes too early.  And besides Pumpkin flavor is never "out of season."  

This super simple Pumpkin Cheese cake recipe has only 9 ingredients.  It takes minutes to make and taste amazing.  So while fall colored leaves are still hanging on the trees I'm going to grab a fork and dig into this delicious cheesecake!

2 pkg. cream cheese, softened (8 oz. each)
1/2 cup sugar
1/2 cup canned pumpkin
1/2 tsp. vanilla
1/2 tsp. ground cinnamon
dash of cloves
dash of nutmeg
2 eggs
1 graham cracker crust (ready to use)

1.) Beat cream cheese, sugar, pumpkin, vanilla and spices in a large bowl with a mixer until smooth.
2.) Add eggs.
3.) Pour into crust.
4.) Bake at 350 degrees for 40 minutes until center is set.
5.) Refrigerate until cool.
6.) Serve with whip cream (or try drizzling chocolate syrup on top.)
