The other day Miss MachiOTTo had to take something orange for show and tell at school. We found a variety of orange colored toys and stuffed animals, but she insisted on taking a sweet potato from our garden. Her teacher said she was very excited to tell the class she helped harvest them out of the ground and show the kids the orange color on the inside. So in honor of her thinking outside the box, I did a little of that with this recipe for Quinoa Sweet Potato Chili which I made in the crock pot.
30 oz. tomato juice
2 1/2 cups cooked, chopped chicken
1 (14 oz) can diced tomatoes
2 (16 oz) cans of kidney beans
1 (15 oz) can black beans
2 large sweet potatoes, peel and diced
1/2 cup quinoa
1 T. chili powder ( or more to taste)
1 tsp. garlic poweder
1 tsp. onion flakes
dash of salt and pepper
1.) In a large crock pot, combine all ingredients.
2.) Cover and cook on low 8 hours or high 4 hours.
3.) Prior to serving add more tomato juice if need be or serve thicker.
4.)Garnish with cheese, chips or sour cream.
