Sweet Cherry Butter

I love a good fruit butter on my breakfast bagel.  So when the Washington State Fruit Commission sent me a box of Rainier Cherries, I knew I had to preserve these in a way to enjoy the taste of sweet cherries throughout the rest of the year.  I know you've all heard of apple butter so here is my take on Sweet Cherry Butter.  I couple hours today canning this delicious spread, will allow me to enjoy the sweet taste of summer all year long!!!  
Ingredients:
2 lbs. sweet cherries (washed, pitted and stems removed)
1 cup sugar
1/2 cup brown sugar
1 tsp. vanilla
1 tsp. lemon juice

Instructions:
1.) Place cherries and sugar in a pan on the stove over medium-high heat.
2.) Stir occasionally and bring to a boil.
3.) Reduce heat and simmer for 1 hour, still stirring occasionally.
4.) Remove from heat and add vanilla and lemon juice.
5.) Puree' thoroughly, then return to pot and bring to boiling again.
6.) Pour butter into prepared canning jars, wipe rims and place lids and rings on top.
7.) Place in a boiling water bath for 10 minutes.
Yield: 4 half pint jars
