This recipe for Pizza Quiche is one of the best breakfast recipes I've had in a long time. Now, you may be thinking... pizza??? Really??? For breakfast??? Well, who remembers eating cold pizza for breakfast in college? And didn't that still taste good the 2nd day? Now that I'm all grown up I thought why give a traditional quiche recipe the old college try by adding some pizza ingredients and see what happens.
The great thing about this recipe is that your kids will love it and it's super easy to freeze to have on hand to serve later. I tried freezing the whole thing and then thawed and reheated in the oven for 20 minutes and it tasted just as good. And the best part is, that it smells a lot like pizza!!!
1 egg, beaten
3/4 cup flour
1 cup milk
1/2 tsp. dried oregano
1/2 tsp. salt
1/8 tsp. pepper
1 cup Mozzarella Cheese, shredded
1/4 cup pepperoni, finely chopped
1 8" frozen pie shell, thawed.
1. Bake thawed pie shell for 10 minutes (covering edges of crust with foil to prevent browning.)
2. Whisk together egg, flour, milk and spices.
3. Stir in cheese and pepperoni.
4. Pour into pie shell and bake at 375 degrees for 30 minutes or until golden brown and knife inserted in the center comes out clean.
If you would like to freeze this quiche to serve at a later time, baked as directed, cool, wrap with plastic wrap and aluminum foil and freeze whole. To serve thaw completely in the refrigerator and then bake at 350 degrees for 20 minutes, until warmed through.
