What could possibly be better than Peanut Butter in a soup recipe?!?!
Peanut Butter and BACON in a soup recipe!!!!
Now I know at this moment you are either scratching your head or turning up your nose, but just go with me on this one for a minute. Take your traditional soup recipe with beans, carrots, celery, and a tomato sauce and chicken broth base. Then throw in a little bacon. Sounds good right!?!? Now, get that soup bubbling hot and add some peanut butter. Your soup just went from good.... to..... AWESOME!!
The creaminess of the peanut butter will give your soup a nice texture and the taste could almost be compared to that of Thai food. We liked this recipe so much we ate it all before I got a picture of it and had to make a second batch later in the week. 16 slices of bacon, cut into 1 inch pieces.
1 T. onion flakes
1 cup carrot, peeled and diced
1 cup celery, chopped
15 oz. can tomato sauce
15 oz. can diced tomatoes
1 cup chicken broth
2 (15 oz.) cans navy beans, drained
3/4 cup creamy peanut butter
1/2 tsp. pepper
1. In a skillet over medium heat, cook bacon until crisp; drain.
2. Return bacon to skillet and stir in onion flakes, carrots and celery, cooking until tender.
3. In a large stockpot over medium heat, stir together bacon mixture, tomato sauce, diced tomatoes chicken broth and beans until hot and bubbly.
4. Stir in peanut butter and pepper until well combined.
