Fall is just around the corner and that makes me want to break out my crock pot and make something warm & hearty to eat. And, I'm happy to be blogging today for Red Gold Tomatoes and tell you about the big "2 A Day Crock Pot Give-a-way" they have going on their facebook page and offer you a giveaway on this blog as well. So to get things started I'm sharing a recipe you can make in your crock pot with some Red Gold Diced Tomatoes. This recipe for Pepperoni Macaroni & Cheese is sure to spruce up your traditional mac-n-cheese recipe and moves the dish from being a side dish to a main entree'. The creaminess of the cheese along with the spice in the pepperoni was a hit at our house.
2 cups pasta of choice, uncooked
3 T. butter
8 oz. american processed cheese, cubed
8 oz. cream cheese, cubed
1 tsp. Dijon mustard
1 cup milk
1/2 cup whipping cream
1 (12 oz) can evaporated milk
1 ( oz.) pkg. of sliced pepperoni
1 (14. 5 oz) can of Red Gold Diced Tomatoes, drained
1. Place the uncooked pasta in the bottom of a greased crock pot (or use a liner).
2. Add butter, cheeses, mustard, milk, whipping cream and pepperoni.
3. Stir until thoroughly mixed.
4. Cover and cook on low for 4 hours; stirring occasionally.
5. A half hour before done, add tomatoes and stir one last time.
Makes 8 servings.
