Do you want to know something wierd??? I never ate an avocado until I was 28. I was in Cancun and was offered chips and guacamole and from that moment on I've been hooked. We probably eat guacamole at least once a month. But I just recently learned that Avocado's are full of Folic Acid and Vitamin B6. And since I'm currently pregnant knowing that I can enjoy avocado and get an extra dose of good things for the baby is a double win. I recently read about this recipe in the August issue of Fit Pregnancy and have to give it a try. With a little tweaking I'm sharing my version of Avocado Chocolate Pudding. While it may not be as sweet as your normal chocolate pudding it definitely has a rich and creamy flavor and I feel totally healthy eating it!
1 ripe banana
6 pitted dates
1/4 cup milk
1 tsp. vanilla extract
1/4 cup cocoa powder
1/4 tsp. cinnamon
dash of salt
2 T. sugar
1. Blend 1 avocado, 1 banana, 6 pitted dates, 1/4 cup milk and 1 tsp. vanilla in a food processor until smooth.
2. Add 1/4 cup cocoa powder, 1/4 tsp. cinnamon, salt and sugar.
3. Blend for 1 minute until evenly combined.
4. Refrigerate for 1 hour before serving.
