Caramel Glazed Apple Cake

It was about this time 2 years ago that I blogged about some recipes out of Gooseberry Patch's Homemade Christmas Cookbook.  Well a few of those recipes I have made a couple more times since then and after spending several weekends at the local apple orchard I was in the mood for the Caramel Glazed Apple Cake I baked out of that cookbook.  Atlas, when I started making my cake I realized.... I didn't have whipping cream to make the glaze with.  So I looked in the fridge and I did have some whole milk.  So I thought I would give it a try and see what happens... and it turned out great.  So here is the new version of the recipe for the glaze and the old recipe for the cake, with some updated pictures of course.
 I think you'll find the gooey-ness of the caramel glaze to be a perfect pairing for this cake.  The hunks of apples compliment the flavor of the cinnamon and nutmeg spices in this cake and are the perfect dessert to curl up with on a cool fall night.
Ingredients for Cake:
1 1/2 cup butter, softened
1 cup sugar
1 cup brown sugar
3 eggs
3 cups all purpose flour
1 tsp. baking soda
1/2 tsp. salt
1 T. cinnamon
1 tsp. nutmeg
5 apples, cored, peeled and diced
2 1/4 tsp. vanilla.
Instructions for Cake: 
1. In a large bowl with an electric mixer beat butter and sugar until light and fluffy.  
2. Beat in eggs.  
3. In a separate bowl, combine flour, baking soda, salt and spices.  
4. Then gradually add dry ingredients to wet ingredients and stir by hand.  
5. Add remaining ingredients and continue to stir by hand.  
6. Pour batter into greased pan and bake at 325 degrees for 50 minutes, or until a toothpick inserted into the center comes out clean.  
7. Cool cake in pan on a wire rack for at least 10 minutes.  
8. With a fork, poke holes all over surface of cake and drizzle warm caramel glaze over cake.  
9. Serve either warm or cooled.
(You can use a 13 x 9 inch cake pan, but I choose to use this mini bundt cake pan that I had to make individual little cakes to serve.)
Ingredients for Caramel Glaze: 
1/4 cup butter
1/4 cup sugar
1/4 cup brown sugar
1/8 tsp. salt
1/2 cup milk.
Instructions for Caramel Glaze:
1. In a saucepan over medium-low heat, melt butter. 
2. Add sugars and salt. 
3. Cook, stirring frequently, for 2 minutes. 
4. Stir in milk and bring to a boil. 
5. Cook, stirring constantly, for 2 minutes.
 Ummm... can't you just smell the spices and apples from this picture with a bite out of the cake.  I highly recommend serving this dish warm.  I bet your taste buds are already salivating for that warm and gooey caramel sauce drizzled on top.
