basil butter

This recipe was inspired by my mother-in-law, so I am giving her a shout out on the blog today and all the credit for this fun way to jazz up your sweet corn. 
This time of year it seems like we are eating corn on the cob about every other day, so one way to make it a little unique is to mix up what you put on top of your corn.  Basil has a sweet taste and gives just a pinch of Italian flair to your corn and is an easy way to give it a little something extra at your next meal.

Simply melt some butter on the stove and chop up some fresh basil.  (yes, that's right I said fresh... no dried flakes this time of year, the herb garden is full of it, so why not use it up.)  Be sure to chop your basil as fine as possible and then add it to your butter. Stir it around, and reduce the heat and leave it on the stove for a couple of minutes so the flavors have time to seep in.

Then place on the table so your guests can spread the basil butter on their ears in the amount they desire.

And for any leftovers, simply cut the kernels off the hear, place in a bowl and pour the remaining basil butter on top.  Cover and place in the fridge and  you will have great tasting leftovers.
