It's been a busy couple of days in my canning kitchen, but I'm taking a break and sharing with you how I canned Sweet Corn. Earlier this summer I froze a bunch of sweet corn, but since I already had my pressure canner out to put up some tomatoes I thought I'd keep it going and put up some sweet corn. From 20 ears I got 9 pints and some left over to eat today. We are going to be well stocked this winter for vegetables and I can't wait to use these in casseroles, soups or just as a side dish.
