Directions: In your stand mixer (or mixing bowl) dissolve yeast in water with sugar. Add the corn oil and blend. Gradually add in your flour and salt at medium speed for 4 minutes. (If kneading... after dough is mixed knead by hand for 7-8 minutes.) Turn stand mixer to low for 4 additional minutes. Put olive oil in a deep bowl and place dough bowl inside and turn over several times to coat the dough in the oil. Place plastic wrap over the top of the bowl and place a kitchen towel on top of the plastic wrap and set aside to rise for two hours. Do not punch down at any time.
Sprinkle 1 cup of shredded mozzarella cheese on top of that.
Then add your pepperoni or whatever other toppings you choose to use.
