Another reason I enjoy this recipe is that it calls for some wine, and nothing taste better than using wine in a recipe and then enjoying a glass of that same wine with your dinner. I choose a Shiraz wine for this but I'm certain any dry red would work just fine.
Ingredients: 6-8 Lamb Chops, 1/4 cup red wine, 2 tsp. crushed garlic, 1 T. curry powder, 1/2 cup Apricot nectar/juice, dash of basil, thyme and rosemary and 2 cups vegetables (I used carrots, but you could use potatoes or green bean or whatever your preference.)
Directions: Mix wine, garlic, curry powder, herbs and apricot nectar/juice together. Place the vegetables in a greased crock pot, or use a liner. Place the meat on top of the vegetables. Pour your liquid mixture on top, cover and cook on low for 8-9 hours.
Serves 2-3 people.
