Sweet Potato Souffle'

As Ott, E would say; "Sweet Potatoes taste good just by themselves."  And I would have to agree, as I do enjoy the taste, but then again, I also have a tendency to not leave well enough alone..... so here is a recipe for a Sweet Potato Souffle'.  This is a rich tasting dish and could almost serve as a dessert, but then again maybe Souffle's just "taste good by themselves."

 Ingredients: 3 medium sized, sweet potatoes, 1/2 cup butter, softened, 1/2 cup sugar, 2 eggs, beaten, 1/2 cup evaporated milk, 2 tsp. vanilla, pinch of salt, 1/2 cup marshmallows, 1/4 cup brown sugar.

 Directions: Peel, cook and mash sweet potatoes. Combine all ingredients except marshmallows and brown sugar.  Mix well and place in a greased baking dish.  Bake uncovered at 350 degrees for 30 minutes or until knife inserted comes out clean.  Sprinkle marshmallows and brown sugar on top and bake for another 5 minutes or until marshmallows are golden.
