canning pasta sauce.... the easy way

With a new baby in the house I've had very little time to can this year.  And even less time to make something like pasta sauce from scratch with all the other chopping and measuring out of ingredients that the recipe would call for.  Needless to say I was very happy to try out Mrs. Wages Pasta Sauce packet which only requires adding tomatoes and a little sugar to make up some quick and easy Pasta Sauce to can this year.  And it tastes great, which is definitely an added bonus.  Simply gather up some tomatoes and waa-laa instant tomato sauce that is ready to be canned and enjoyed later this fall and winter.
To start with you need 20 medium sized tomatoes.  Core the tomatoes and boil them in water for a couple of minutes, or until you see their skins start to loosen.  The drain run cold water over the tomatoes until you can handle them without getting burned.  Then remove skins and seeds.
Place tomato pulp in a food processor and chop up to a sauce like consistency.
Place sauce in a pan on the stove and add your Mrs. Wages seasoning packet and sugar as directed on the package.  Simmer in pan according to instructions.

Another great feature of Mrs. Wages products is that you can either enjoy it right away, freeze it or can it and there are directions for all three on the side of the packet.  Of course I canned which required using the hot water method for 40 minutes to process your jars.  As you can see below it worked out great and saved me a lot of time, but still taste great and will save me even more time this winter, when I use this sauce in some of our favorite Italian dishes.
