Pineapple Upside-Down Donuts

I broke out my donut pan again and have another fun recipe to share with you to give your breakfast donut a little something different. Keeping with the cake donut theme I decided to try a Pineapple Upside-Down Cake Donut, and let me tell you, it turned out great. The citrus from the pineapple combined with the warm cake donut will give your breakfast routine a kick!
Ingredients:  1 (8 oz) can of diced pineapple, drained, 4 T. brown sugar, 1 1/2 cup flour, 2/3 cup sugar, 2 tsp. baking powder, 2/3 cup milk, 1/4 cup butter, melted, 1 egg, 2 tsp. vanilla

Directions:  Preheat oven to 425 degrees.  In a greased donut pan place pineapples in tray and sprinkle with brown sugar.  In a medium mixing bowl combine; flour, sugar and baking powder.  Add milk butter, egg and vanilla.  Mix well.  Pour into donut pan about 3/4's full.  Bake for 5 minutes then take out of oven and let sit in pans for another 5 minutes before removing to a wire rack.  Makes 24 donuts.
