Ingredients: 2 cups all purpose flour, 1 cup sugar, 1/2 tsp. baking powder, 1/2 tsp. baking soda, 1/2 tsp. salt, 1 1/2 cups dried fruit (I used Sun-Maid Fruit bites which has peaches, apricots, raisins and more) 2 eggs, lightly beaten, 1 cup yogurt, 1/2 cup vegetable oil, 1/2 tsp. vanilla.
Directions: In a large bowl, combine the flour, sugar, baking powder, baking soda and salt; add fruit and toss gently. In a separate bowl, combine the eggs, sour cream, oil and vanilla. Make a well in your flour mixture and add wet ingredients to the center. Stir together until just moistened.
Fill greased muffin pans 2/3's full. Bake at 400 degrees for 18-22 minutes. Yield: One dozen.
