Fruit Cocktail Muffins

If you'll recall Ott, E's best friend and his wife were expecting a baby a month after us and we are happy to report their little one has arrived and they are all doing great. So like any friend of a family with a newborn we wanted to take them some food during the first weeks back home and I know most people take casseroles and items for lunch and dinner so I thought why not take them some breakfast food. I baked up a couple different varieties of muffins and one for a Fruit Cocktail Muffin is what I am sharing with you today. These muffins have dried fruit in them which give them quite a flavorful taste and make them a little healthier.


Ingredients: 2 cups all purpose flour, 1 cup sugar, 1/2 tsp. baking powder, 1/2 tsp. baking soda, 1/2 tsp. salt, 1 1/2 cups dried fruit (I used Sun-Maid Fruit bites which has peaches, apricots, raisins and more) 2 eggs, lightly beaten, 1 cup yogurt, 1/2 cup vegetable oil, 1/2 tsp. vanilla.
Directions: In a large bowl, combine the flour, sugar, baking powder, baking soda and salt; add fruit and toss gently.  In a separate bowl, combine the eggs, sour cream, oil and vanilla.  Make a well in your flour mixture and add wet ingredients to the center.  Stir together until just moistened.

Fill greased muffin pans 2/3's full.  Bake at 400 degrees for 18-22 minutes.  Yield: One dozen.

Looks good! I love your family pic! It's taking me so long to catch up with everyone since getting back from vacation. The summer just keeps right on rolling along. I'm going to have to rearrange my schedule to make the next brown bag so I can really catch up with everyone!

I had never heard of a Dad-chelor party - what a great idea! Your muffins look delicious. I always enjoy recipes made with a mixture of delicious dried fruits. They must have made a very welcome gift for your friends!
