Double Chocolate Zucchini cookies

I was looking for something to use up the last of my shredded zucchini I had in the freezer from last summer and thought about putting a spin on Ott, E's favorite Chocolate Chip Zucchini Cake and transform it into a cookie. Here is the recipe I came up with for a Double Chocolate Zucchini Cookie and Ott, E liked them just as much as the cake version.

Ingredients:2/3 cup margarine, softened, 2/3 cup brown sugar, 2 eggs, 1 1/2 cups old fashioned oats, 1 1/2 cup white whole wheat flour, 1 tsp. baking soda, 2 T. baking cocoa, 1/2 tsp. ground cinnamon, 1/2 tsp. ground cloves, 1 cup chocolate chips, 2 cups chopped, shredded zucchini.
Directions:  Preheat oven to 375 degrees.  Beat margarine and sugar together, until light and fluffy.  Add eggs.  In a separate bowl combine oats, flour, baking soda, cocoa and spices.  Then add to wet ingredients in several additions, mixing well after each.  Finally, stir in chocolate chips and zucchini. 
Drop rounded teaspoonfuls onto ungreased cookie sheets.  Bake for 10-12 minutes; cool on wire rack.  Makes 2 1/2 dozen cookies.

Yum! I can't wait for my zucchinis to grow grow grow so I can make treats like this.
