Blackberry Glazed Duck Breast

 I had some Maple Leaf Farms Duck Breast in the freezer so I thought I would fix Ott, E and myself a nice dinner.  After flipping through some of my recipe books I decided on a blackberry glaze to adorn our duck.  The recipe turned out great and Ott, E said it was his favorite duck entree so far.  (So you know it's good.)  Here is how I made it.  

 Ingredients: 2 Duck breast, 1 cup blackberry jam, 1/2 cup sweet chili sauce, 1/4 cup white grape juice, 1 T. lemon juice, 1/2 tsp. ground allspice, 1 T. parsley flakes.
 Directions:  Preheat oven to 400 degrees.  Place a saute pan on the stove and allow to heat up for 3 minutes.  Place duck breast in pan skin side down, cover and cook for 10 minutes.  At the same time in a separate medium saucepan mix jam, chili sauce, grape juice, lemon juice and allspice.  Bring to a boil, stirring occasionally.  Simmer uncovered 10 minutes.
 Transfer duck to greased baking dish, and place skin side up. Pour 3/4's of your glaze over the meat and place in the oven.  Bake for 15-18 minutes or until internal temperature of the duck reaches 165 degrees.   Serve with vegetables and enjoy!!!

Looks good! Isn't today your due date? How are you doing? Hope you do not have to wait too much longer; I know it can get a bit tedious and tense with each little pull or twinge.

You might get my nerve up with this recipe to try cooking duck. I have eaten it out and have never cooked it. Please share this recipe on my foodie friday party today.
