The other thing I really like about this recipe is that it gives me a chance to use my pineapple slicer, which is one of my favorite kitchen gadgets.Ingredients: 1 pineapple sliced into chunks, 3 mangos' peeled and sliced into chunks, 2 tsp.ground ginger, 2 T. finely chopped candied ginger, 2 T. fresh lime juice, 2 T. cornstarch, 1/2 cup brown sugar.
Topping Ingredients: 1/2 cup brown sugar, 1/4 cup flour, 3/4 cup old fashioned oats, 1 tsp. ground ginger, 1/4 cup cold butter.
Directions: Preheat oven to 350 degrees. Place sliced pineapple and mango in a bowl. Add ginger (ground and candied) lime juice, cornstarch and brown sugar. Toss and set aside.
In another bowl mix topping of brown sugar, flour, oats, and ground ginger. Add butter and blend with pastry blender until the mixture forms clumps.
Place mango/pineapple mixture in a large baking dish. Sprinkle topping evenly over the fruit.
Bake for 30 minutes until topping is crisp and fruit is cooked through. Sever warm. (Great with ice cream.)

I'm not sure I've ever had a pineapple mango crisp, but it is just the kind of dessert I like! Looks delicious! And my parents have a pineapple slicer and I love it. It's the only way to cut up a pineapple. I plan on buying one soon. Thanks so much for sharing with the Hearth and Soul!
This looks delicious!! I have never seen a pineapple slicer but it now on my "want" list!
Pineapple and mango sound like a gorgeous combo, especially with the candied ginger and lime - delicious!
Yum! Growing up in Southern Africa, where mangoes were much easier to get than apples, this was one of my favorite desserts:)
