Ingredients: 1 cup + 1 T. all purpose flour, 1 cup fine yellow cornmeal, 1/2 cup sugar, 1 T. baking powder, 1/2 tsp. salt, 1 cup low-fat plain yogurt, 3 T. unsalted butter, melted, 1 tsp. vanilla extract, 2 tsp. finely grated orange zest, 2 tsp. orange juice, 1 1/4 cup dried cranberries,1/2 cup confectioner's sugar.
Directions: Preheat oven to 400 degrees. Line 12 standard muffin cups with paper liners. In a large bowl, whisk together 1 cup flour, corn meal, sugar, baking powder and salt. In a small bowl, whisk together yogurt, butter, vanilla and orange zest. Add to flour mixture stirring until combined.
Add cranberries to batter, divide batter among muffin cups.
bake until puffed and set, about 20 minutes, rotating pan halfway through.
For glaze stir together orange juice and confections sugar. Drizzle over muffins and let glaze set, about 10 minutes, before serving. To freeze store in airtight container, label and place in your freezer.

What a delicious combination of flavors!
Your muffins look delicious. I like the idea of the lovely orange glaze as well as the contrast between it and the cranberries. I do like the texture cornmeal gives baked goods!
