Shredded Apricot Pork Roast...what a crock

My crock pot was working overtime this past weekend as I threw in a pork roast in the morning and 9 hours later I was shredding in up for sandwiches and was pleased with the unique flavor it had.  You see, I threw in some twist on the BBQ sauce/marinade that the roast sat in all day.  This recipe calls for apricot preserve (along with other ingredients) and it puts a little zing in your flavor, pairs nicely with the meat and also with whatever BBQ sauce you choose to use.

Ingredients: 1 T. onion flakes, 1 cup apricot preserves, 1/2 cup brown sugar, 1/4 cup BBQ sauce, 1/4 cup vinegar, 2 T. Worchester Sauce, 1/2 tsp. red pepper flakes, 3-4 lb. pork loin roast.
Directions: Combine ingredients in a small bowl.  Place roast in a greased crock pot.  Pour ingredient mixture over roast.  Cover and cook on low for 8-9 hours. Remove roast from liquid and place on a cutting board.  Shred meat with a fork and serve.
We went ahead and poured additional BBQ sauce on the meat as a condiment before eating our sandwiches.  They taste great just plain too.  And I love that my crock pot did all the work for me.

This sounds great! It will be a great trade-up from the crock pot pork recipe I've been using: 1 package taco seasoning and 1 cup water. Makes excellent shredded pork tacos, but something new is definately due!

You had me at apricot! I love apricot with pork, and the other ingredients sound delicious too. Your recipe sounds wonderfu, and I like that it can be made in the slow cooker too.
