Lamb Fajitas

First off I have to tell you I am a big fan of the Mexican Food restaurant, Don Pablos. They have great queso dip and fajitas. Well this past weekend, Ott, E was watching football and I was looking through my Taste of Home Cookbook for a recipe to make with Lamb.  I found one for Lamb Fajitas and thought this would be a great meal to eat while watching the game.  Little did I know that when I was tasting this recipe it would taste so similar to Don Pablo's fajitas that you'd swear I'd gotten take out.  They were delish and perfect for a weekend meal.  In fact, Ott, E told me he wants to make this again some time.... perhaps I have our Super Bowl meal planned now.

Ingredients:  2 leg of lamb steaks, 1/4 cup vegetable oil, 3 T. Lemon juice, 1/3 cup soy sauce, 1/3 cup brown sugar, 1/4 cup cider vinegar, 1 1/2 T. Worcestershire Sauce, 1 T. ground mustard, dash of pepper, 1 medium onion (sliced), 4 flour tortillas (warmed).  Optional 1 green pepper sliced, 1 sweet red pepper sliced. 
Directions: cut lamb into thin bite-sized chunks.  In a large resealable plastic bag combine oil, lemon juice, soy sauce, sugar,vinegar, Worcestershire, mustard, pepper and lamb.  Seal bag and turn to coat.  Refrigerate for 3 hours; turning occasionally.
Place lamb and marinade in a large Skillet and bring to boil.  Reduce heat, cover and simmer for 8-10 minutes or until meat is tender.  Add peppers and onions; cook until vegetables are crisp-tender; about 4 minutes.
Using a slotted spoon; place meat and vegetables on tortillas. Then you can add toppings if you so choose.  I added tomatoes, but Ott, E added lettuce and cheese as well to his.  This served two of us and we were both really full after eating, but loved every bite.  I'm sure you could use this same recipe with beef or chicken, but I always encourage my readers to give lamb a try.

I still have not added lamb to my list of "Meats I have cooked with." This sounds good though; I LOVE fajitas! I'm having imitation crab fajitas tonight!

Lamb is one meat that I have never cooked with. That isn't saying too much because I am a very picky meat eater:-) You made this sound very easy to make. Thank you so much for sharing with Trick or Treat Tuesday!!!

Your lamb fajitas sound delicious. I don't know why I have never thought of using lamb in fajitas before (I've done veggie fajitas, chicken and beef ones though). The marinade you have used sounds amazing, and how wonderful that it tastes like the fajitas you have eaten at Don Pablos! Thank you for sharing this post with the Hearth and Soul hop.
