In a small bowl I mixed together; 1 tsp. basil, 1 tsp. oregano, 1 tsp. garlic salt, 1/4 cup Parmesan cheese, 1/4 cup Swiss cheese and 1/4 cup chopped fresh spinach.
I then took my two chicken breast and cut them each into two pieces. I took each piece and sliced them in the very middle, making sure not to cut through to the outside, but creating a little pocket inside the chicken. I then spooned my Spinach and Cheese mixture into each one and placed in a greased baking dish. I baked them in the oven at 375 degrees for 55 minutes or until the thermometer read 170 degrees.
I served with some sweet potato fries and a small salad. Ott, E was please with his dinner, and I'll admit it was quick and easy to make and made for a delicious and nutritious dinner after a busy holiday weekend.

I have chicken defrosting as I type. I know I have spinach and cheese in the fridge. Hmmm dinner tonight :)
I had to substitute a bit as I didn't have garlic salt or oregano but this was WONDERFUL!!! We loved it. My daughter actually said "mom this tastes like something you'd get in a restaurant" Talk about a compliment :)
