To start with I shredded 4 cups of turkey and placed it in my crock pot. I used a crock pot liner, but if you don't have one, simply spray your crock pot with cooking oil.
Next I added one can of enchilada sauce, one can of tomato paste, 1/4 cup of water and 1 T. of taco seasoning. Stir and cover your crock pot. Cook on low for 4 hours or on high for 2 hours.
Then roll up like you would a burrito. Eat and enjoy. With the taco seasonings and Mexican taste of these burrito like creations, your family will never think that this came off their Thanksgiving Table. It's a unique way to use up leftovers and is quick and easy to make.
And any leftovers you still have of the Turkey Ole' can be placed into freezer containers and kept for later use this winter. Simply thaw and you can enjoy this dish again.

Sounds like a great way to use up leftovers from Christmas.
Just so happened to cook a turkey breast last night in the crock pot and had a lot of leftovers, so this is going to be on the menu tonight!
