a fantastic fall breakfast: Pumpkin Chocolate Chip Pancakes

I've mentioned before on this blog about our lazy Saturday morning tradition and how Ott, E likes to makes pancakes.  Well today I'm sharing a great autumn recipe for Pumpkin Chocolate Chip Pancakes.  The flavors of the pumpkin and chocolate work great as a breakfast option and pair very nicely with maple syrup.

 Ingredients: 1 cup flour, 2 T. baking powder, 2 T. sugar, 1 tsp. pumpkin pie spice, 1 tsp. salt, 1 cup milk, 1 egg, 2 T. oil, 1/4 cup pumpkin.
 Mix together and pour into a hot skillet (or if you are Ott, E a quesdilla maker) until brown on one side, flip and brown on the other side.  Serve warm with syrup.
