Honey Lemon Apple Jam

After Ott, E and I went apple picking I canned my usual apple products: Carmel Apple Jam, Applesauce, and applebutter.  But this year I thought I would also try a new recipe.  One that I actually found on Mrs. Wages website which was originally from Marisa, the blogger over at Food in Jars.
I tweaked the recipe from hers a little so here is my version of this jam recipe which both Ott, E and I will admit packs and citrus punch and is sure to jump start your mornings on your breakfast toast or biscuit.

Ingredients:
12 cups chopped apples
1 1/2 cups lemon juice
1 cup honey
5 cups sugar
zest of 2 lemons

Directions:
Combine the chopped apples and lemon juice in a large pot and cover over med-low heat, stirring frequently, until the apples have broken down.  When you've got a nice, chunky applesauce, add the honey and sugar and stir to incorporate.
Bring the fruit to a bubble and cook for at least 10 minutes, stirring regularly.  (It will become soupy.)  After 10 minutes, turn off the heat and stir in the lemon zest.
Fill jars, but leave 1/4 inch headspace.  When wiping down the rims of the jars, try using white vinegar to help get any stickiness off.  Apply lids and screw on rings.  Process in a boiling water bath for 10 minutes. 
I also decided to sign up for the Indy Food Swap coming up here in a couple of weeks.  I have heard Kate over at the Hip Girls Guide to Homemaking talking up these food swaps, so when they started one in Indy I thought I would give it a try.  I will be there with jars of this delicious jam to swap.

I guess it is all the lemon that makes it tart. So you are going to share some of your goodies. You are brave trading home canned food.

I just got the automatic jam and jelly maker. Have you tried this recipe or any other recipes with the automatic jam maker?
