Canning Week 2011: Recipes

For those more advanced canners we are featuring canning recipes for today's Canning Week Blog Party Theme. I will be sharing my recipe for Italian Sauce using Tomatoes, Onions and green peppers from the garden.  This recipe has a fresh taste with wild mild Italian flavors and goes great over pasta.
To start I use my food processor to finely chop up 1 green pepper.

Then I chop up 1/2 onion.
And 1 1/2  cups of chopped celery.
While I'm chopping I have about 24 large tomatoes on the stove boiling.  I will remove the skins and seeds and use my food processor to almost puree' these but I still like them to have a little bit of chunkiness to them.
Then I mix all the ingredients together in a large sauce pot on the stove over medium heat.  I add to this 1 Tablespoon basil, 1 Tablespoon Oregano, 1 Tablespoon minced parsley and 1 teaspoon crushed red pepper flakes. Cover and cook for 10 minutes.
Next I use a funnel and ladle the sauce into my hot sterilized jars; leaving 1 inch headspace at the top.

I wipe down the rims, add my lids and rings and process pints for 20 minutes at 10 pounds of pressure.  I used pints because this is a good size for Ott, E and I, but if you use Quart sized jars then then need to be processed for 25 minutes at 10 pounds pressure.

Your sauce looks very good, and I'm sure you'll love it for pasta or other dishes. My mom used to make Italian sauce too, so that is another thing I'd love to try canning someday. I've enjoyed learning from this party this week, so thanks for all the wondeful ideas.
