one chocolate sandwich cookie...two ways

I know I've mentioned before how much Ott, E likes anything with a chocolate and peanut butter combination.  What I haven't mentioned is how much I like anything with a chocolate and mint combination, but it's always one way or the other when baking up a delicious dessert.  Until today.....
I was looking to make some cookies this past weekend and came upon this recipe for a Chocolate Sandwhich Cookie in my Taste of Home cookbook. The recipe called for a mint chocolate filling.  For some reason the thought of making a peanut butter filling popped into my mind.  Hello... Genious!  What an idea?!?!  I can make the same batch of chocolate sandwhich cookies and then make half with a mint filling and the other half with a peanut butter filling and end up with two different kinds of cookies.
So out to the kitchen I went to stir up a batch.  Of course I used my King Arthur Unbleached All Purpose Flour to bake these delicious cookies with as that is the themed ingredient for this month's Iron Chef Challenge.
Here is a recipe card that you can click on and print off to keep for yourself.
Melt the chocolate chips, butter, brown sugar and water in a saucepan on the stove.
Add the eggs and vanilla and dry ingredients.
Drop rounded teaspoons of dough onto cookie sheet about 2 inches apart.
Bake for 10-12 minutest then place on cooling racks.
For Mint Filling use 2 1/2 cups of confectioners sugar, 1/4 cup butter, 3 T. milk, 1/2 tsp. peppermint extract, 3 drops of green food coloring, 1/4 cup mini chocolate chips.  In a mixing bowl combine ingredients until smooth.  Spread on bottom of cookie and top with another cookie.
For the Peanut Butter Filling use 2 1/2 cups of confectioners sugar, 1/4 cup peanut butter, 1 tsp. vanilla and 3 T. Milk.  Combine ingredients in a mixing bowl until smooth.  Spread on bottom of cookie and top with another cookie.

Ott, E loved the taste of the chocolate cookie and thought they would even taste good by themselves, but when you add the filling, it makes for delicious comibination and is sure to be a cookie treat for anyone who eats it.  Be sure to check out all the other great recipes using King Arthur Flour on this weeks Iron Chef Challenge!

Looks yummy, but I think I am going to have to let the heat calm down before I crank up my oven, that and our fair starts Thursday so we are in crazy FAIRMANIA (Steve and I are both on the fair board) Mi vida loca!

Ha....I love this as it reminds me of "What could be better than peanut butter cookies? Why a cookie sandwich of course!"
