I was looking to make some cookies this past weekend and came upon this recipe for a Chocolate Sandwhich Cookie in my Taste of Home cookbook. The recipe called for a mint chocolate filling. For some reason the thought of making a peanut butter filling popped into my mind. Hello... Genious! What an idea?!?! I can make the same batch of chocolate sandwhich cookies and then make half with a mint filling and the other half with a peanut butter filling and end up with two different kinds of cookies.
Here is a recipe card that you can click on and print off to keep for yourself.
Melt the chocolate chips, butter, brown sugar and water in a saucepan on the stove.
Add the eggs and vanilla and dry ingredients.
Drop rounded teaspoons of dough onto cookie sheet about 2 inches apart.
Bake for 10-12 minutest then place on cooling racks.
For Mint Filling use 2 1/2 cups of confectioners sugar, 1/4 cup butter, 3 T. milk, 1/2 tsp. peppermint extract, 3 drops of green food coloring, 1/4 cup mini chocolate chips. In a mixing bowl combine ingredients until smooth. Spread on bottom of cookie and top with another cookie.
For the Peanut Butter Filling use 2 1/2 cups of confectioners sugar, 1/4 cup peanut butter, 1 tsp. vanilla and 3 T. Milk. Combine ingredients in a mixing bowl until smooth. Spread on bottom of cookie and top with another cookie.

Looks yummy, but I think I am going to have to let the heat calm down before I crank up my oven, that and our fair starts Thursday so we are in crazy FAIRMANIA (Steve and I are both on the fair board) Mi vida loca!
