Peanut Butter & Chocolate Chip Pancakes

My favorite Saturday mornings start off with Ott, E making pancakes for breakfast.  Yes, that's right, I said Ott, E.  He is the pancake maker and he has a fun appliance to make his pancakes and a tasty recipe to share.
One year for Christmas we received a Quesdilla maker.  It's small round and flat on both sides.  (sound familar)  We looked at the maker and thought.... I wonder if you could make pancakes with this.  So out came a mixing bowl and some ingredients and we poured in some batter and closed the lid.

Apprehensively, we raised the lid of the Quesdilla maker and we found
a perfectly round, perfectly baked pancake.  We were amazed and Ott, E has been baking up pancakes with it ever since.  Anytime guest come over he is up early baking up a storm.  He usually makes plain pancakes and some with chocolate chips, but here lately he has stumbled upon a new recipe for a peanut butter pancakes.  Well one look at that recipe and Ott, E said... "This needs some chocolate chips."
So today I share with you Ott, E's recipe for Peanut Butter & Chocolate Chip Pancakes.
You'll notice there is buttermilk in this recipe.  June is National Dairy Month and to celebrate this; the Iron Chef Challenge is featuring Milk as it's themed ingredient.  Sponsors Dean Foods and Kelsay Farms will award a prize to the winning recipe so be sure to come back June 17th - 24th and link up a recipe that calls for milk.

I love the quesadilla maker for pancakes idea. I like to use my waffle iron when I mix up a batch of cornbread.

YUM! I think I'm the only one who would eat them though. We had a bad batch of chocolate chip pancakes at my mom's house a while back and the kids will not eat pancakes with anything in them since then. Maybe I'll make a batch for myself!

Don't you love it when you find a new use for an appliance! This sounds like a great recipe to try when my granddaughter comes to visit!
