chunky pOTTato soup

Remember last summer when you all thought I was crazy for canning potatoes from our garden?  Well I've shown off a lot of great soups that I have been using them in this winter. Yet I was still looking for a potato soup recipe.  I have tried 2 recipes for potato soup this winter and while they were ok, they were not exactly what I was looking for, so I wasn't going to bore you with them on this blog. They weren't the kind of potato soup that "mom used to make" and they weren't that good, "stick to your ribs" kind of a potato soup, that you look forward to eating on those cold winter day.  They were just soups... just potato soups. But as the old saying goes, "the third times the charm" because the third recipe I found and tried was exactly what I was looking for!!!  It had that creamy taste that you long for in a soup and it just makes you want to go back and get a second bowl full.

Here is the recipe that I used. Now that I found it I want to share it with everybody so you won't have to go through all those average potato soups like I did. So feel free to print off my handy recipe card so you can make this delicious soup too.

Top it off with some cheese and bacon bits and you have the kind of potato soup I longed for all winter.

Oh my, I had no idea you were canning potatoes or looking for a potato soup recipe. Your recipe sounds great, but I also have one that is to die for! It makes a huge pot too. I will e-mail it to you if you have an e-mail listed.

And canning potatoes??? I have never heard of it. I would love to know how to do this. We had a ton of potatoes to ruin this year because we had too many, and they only last so long. Please, if you have a post telling how to can them, could you direct me to it? If not, could you e-mail me? It would be much appreciated, as those fresh potatoes are much too fine to waste. We already have potatoes coming up, I can't wait for them to be ready to eat!

I typed out this whole potato soup recipe, and it will not let me send an e-mail. It keeps saying I typed the wrong code in (which I didn't, and re-typed it 6 different times) so I can't get the recipe to you with this e-mail. Sorry!

Your soup sounds wonderful. To be honest I have never seen canned potatoes before ... let alone tried to make them ... I'm wondering why not ... we "can" just about everything else. I prefer fresh if I can have it and our potato production is just enough for the family; but what a great idea this is.
