I have to tell you a story before I share this recipe with you today. You see I took lots of pictures while I was making and preparing this chicken fiesta casserole. We ate the casserole for dinner, did the dishes and when I sat down to blog about it; I wasn't thinking and deleted all the pictures I just took. Ugh! I ran out to the kitchen and pulled the leftovers out of the fridge and took a picture of those to show you all what the finished product looks like. So to some extent if the leftovers look this good then you know the original product looks and taste fantastic!!!!
I used Reg Gold diced Tomatoes with green chili's to add a little kick to this recipe.

I do that all the time with pictures! I've even purposely made something twice because I forgot to photograph it the first time! I think this sounds delicious, all the flavors that I love!
