what to do with leftover mashed pOTTatoes?

I've said it before and I'll say it again.  I love, love, love (not like) LOVE my bread machine.  It is my favorite kitchen apparatus.  And, I enjoy making various bread recipes in it.  Just this past weekend I made a Potato Onion Bread and used leftover mashed potatoes in it as that's what the recipe called for.  It turned out so tasty and my kitchen smelled amazing.  Here is the recipe, so if you have a bread machine pull it out and use up your leftover mashed potatoes in this unique way.

Potato Onion Bread
3/4 cups hot water (115-125 degrees F.)
3 T. Oil
2 Large eggs
1/2 cup finely chopped onions
2/3 cup mashed potatoes
3 T. sugar
1 1/2 tsp. salt
4 cups bread flour
2 T. quick rise yeast

Measure and add liquid ingredients to the bread pan.  Measure and add dry ingredient (except yeast) to the bread pan.  Form a well in the flour where you will pour the yeast.  (Yeast must Never come into contact with a liquid when you are adding ingredients.)  Measure the yeast and carefully in into the well.
Please baking pan into bread maker and close the lid.  Turn on bread maker and select the Express Bake 80 minutes and press start.
It has a great flavor and would go with any dinner entree'.

oh yum! I make potato bread but never thought of using mashed potatoes!! ( I have to confess that my dog usually gets them )

Now I'll have something to use them in!

My mom has been telling me I needed a bread machine for my family. Do I? Leftover mashed potatoes in bread might just sell me. Maybe Santa will bring me one? Thanks for sharing.
