When I found this recipe I was so amazed and excited at the same time. Why hadn't I ever thought of this before??? A recipe for a breakfast casserole that you put in your crock pot. Genius!! Simply put all the ingredients in your crock pot before you go to bed a wake up to a perfectly cooked breakfast casserole.
This is great for when you are hosting house guest or when you just want a lazy morning. Wake Up, Dish Up and eat. (It doesn't get much quicker than that.)
Here is a recipe card with all the ingredients. Just click and print and you too can make this tasty, quick and easy Egg Brunch Casserole. Now just think of all the other things you can do in the morning since you won't have to worry about baking times. (Please note I used a 5 quart crock pot for this recipe.)

Absolutely brilliant - nothing is worse than oversleeping and the casserole isn't done until almost lunch - not the I have ever done that LOL! I usually make mine with bread, I wonder if that would work? I have visions of Christmas breakfast with this idea! thanks for sharing with us at the Hearth and Soul Hop!

I'm going to try this. I usually assemble my casserole the night before and then it goes from the fridge to the oven. By the time toast or biscuits are done, coffee made, fruit, jams, jellies out, casserole is done. On Christmas morning it bakes while we explore the tree.
Making this right now and I have a question...do you set the crockpot to low or high? I would assume low but I am known to be wrong sometimes ;) Thank you for the great recipe! Smiles~Beth

I found that after 5 or so hours the edges were very brown. I turned it to the keep warm setting. I hope internally it's done. I just didn't want it to burn. I also used the oval crockpot
Soo based on the bland comments I seasoned w/ salt and pepper every layer and i might of over seasoned now.. oh well it's still good. I had some salsa i put on it too.
I made this last night/this morning and felt it was just so-so. I did not have whole milk and I wonder if that made a difference in it being a little dry. Also, the dill was a little over-powering and next time I will use different spices. As far as convenience this recipe is great! Loved waking up to the yummy smell of breakfast waiting on us...even if it was 5:15 am (thanks to eager kids ready to open Christmas presents!).

I tried this last night/ this morning. It was good, but I will say that a 6 qt crockpot does not work very well for the amount of ingredients. It was done in less than 7 hours. Maybe it would be ok if I doubled the recipe. Thanks for sharing the recipe.
I omitted the dill & added my favorite salsa (or you can add favorite salsa seasonings, ie; cumin, cayenne, etc...). Served it with a dollop of Greek Yogurt (or Sour Cream). This solved the "Bland" comments some had made.

Ok, so I need help. I tried this yesterday morning to take to a brunch and it was a fail! It was overcooked and tasteless. I was so sad! :( I just bought a new crock pot so that's not the issue. Is 8-10 hours on low really accurate? I wondered if it was too long before I cooked it. I cooked it for 9 hours. Thoughts?

Overnight did seem to be a little too long. It was a little tough when I got to it 7 hours after I started it up. I followed the recommendations in the comments and had it with salsa and sour cream and that helped it, but probably not something I'd make again. Thanks for blogging though!! :)

Made this for easter Brunch today. Put it in the crock pot when I first got up and cooked on HIGH(instead of low... for about 5 hours), then got ready, went to church, and returned home to host 10 people for brunch (also made a french toast in antoher crock pot) it was delicious, easy, and I'm sharing the recipe with family and raving about it on pinterest (where I first found it!). I found this recipe and made it for Mother's day! It was not in it for the full 8 hours on low and the one side was burnt making it very dry. Everyone enjoyed it, but do you have any pointers for how to make it more moist for next time?
I do the same thing with Apples. I use mix the crumble crust in one bowl and set aside. I then peel, core and slice the apples and mix them with cinnamon, nutmeg, and sugar. I layer the crust in the bottom, slices of butter, apple mix, then repeat. cook on low for 8-10 hours and you have the perfect Apple surprise to go along with the your recipe.
We love regular breakfast casserole baked in the oven so I can't wait to try this. Sounds great for company or holidays. I will use a crock pot liner to prevent burning around the edges.
Wow this sounds great!! Someone said using turkey bacon will eliminate cooking it first, why is that? I will make this and then scoop some into a tortilla for an on the go breakfast for my daughter on the way to School. She rather sleep in than eat.. This way she can do both.
You can buy turkey bacon already cooked at Costco.... You can also try the real bacon bits you can buy in sealed zip licks off the shelf... I sm going to try this with sausage instead, maybe even with the maple flavor and a few bacon bits too!!!! Yum!

8-10 hours is a little too long, the edges were pretty much burnt but the inside was great!! Yes my crock pot was on low. Great recipe but needs a little tweaking.

I made this over the weekend, yum! I was concerned about all the "bland" comments so added tastefully simple seasoning salt in place of regular salt and seasoned each layer lightly with seasoning salt and pepper. I added a half cup of sour cream to the eggs. I cooked the onion and 3 cloves of garlic in a few tablespoons of the bacon grease. I also used kraft Mexican cheese blend with a touch of cream cheese in place of plain cheddar...Sooooooo good!

Ok So I tried this today for my MOPS group. But I tweecked it a bit. I have a big crock-pot, so I used 18 eggs, a whole medium size onion, green and red bell pepper, and cooked it for 9 hours, and it was good. Thank for your the recipe.

First of all I did make this and it tasted like, AWESUME! My doubt about how much time it takes to cook was confirmed 8 hours in the morning. Low heat. My gut said no more than 5 hours.my product was over cooked.

I just made this and it did'nt turn out well at all. I put the slow cooker on low, and honestly it looked like it was done after 2 hours....but I left it alone & went to bed. Woke up this morning to crock pot burned casserole 2 " around the edge and only Okay right in the center. I won't make this again. I'll stick to my 9x13 put it in the oven breakfast casserole.

May have to reduce hours cooked if u make a smaller batch. My hubby and I can't eat 12 eggs... we had an issue with top and outsides being burnt. Even in low. It smells really good! Just have to taste test still but I'm affraid. Lol.
Made these today for supper. Consistency turned out great (about 7 hours on low), but the flavour was kind of bland. Used a crock-pot liner. Added lots of spices, (salt, pepper, garlic powder, onion salt, cayenne, all in moderation). Next time, I think I'll add salsa like other readers have said. All in all, the idea is great, just need to tweak it a bit.

Made this for "breakfast" dinner and it was a hit. I omitted the peppers and garlic/onion, substituting for minced garlic and onion. Even though it still had wonderful flavor, I think doing this way made it dry. My husband had the idea to put over-easy eggs (making sure the yolks are runny) on top of each serving. It was sooo good and we will be doing this way again.
This may replace my Christmas Quiche for ease and quickness!
~ I think I may try to half the recipe (6 vs 12 eggs) since it's just the hubby and I at home now.

okay I tried this, mine was done after 4 hours on low. I turned it on warm and the longer it stayed in the crock pot the broowner the edges got! so you need to serve it immediately. I used the sausage instead of the bacon an added the salsa to it. it tastes very good!
I use tater tots.

I'd like to make this for Christmas morning. Has anyone had success doubling the recipe and using a 7qt crock pot? Mine is oval, and has warm, low, medium, and high settings. Reading some of the comments, I'm concerned about the edges burning and it over cooking. The liners sound like a good idea, so I'm going to try that. But for anybody who has doubled the recipe, which temp setting was best, and for how long? Thanks!
Slow cookers are the most used appliance in my kitchen. Never enjoyed cooking more since I purchased my slow cooker. Every weekend I try different recipes and portion after in freezer containers and I have breakfast lunch and dinner for the rest of the week.
I actually made this similar casserole. Only thing I did different was to substitute the bacon with pork sausage. (Jimmy Deans reduced fat). Just brown the sausage in a pan , much the same process as cooking the bacon. then follow the same directions in this recipe for the ingredients and layering . Wake up the next morning and piping hot and ready to go. Just had the side condiments of choice, ketchup, in my case Pace Picante sauce hot. Now that is one hearty breakfast and freezes and warms back up in the microwave, well.
Made this recently and it was amazing. I absolutely loved it.
Next time I'll go a little heavier on the vegetables & eggs to balance out the potatoes.

im trying it now in smaller crockpot about 3 qt im doing veggy cherzo then a layer of mushroom and onion and garlic gravy on top of the chrezo mixed with the hashbrowns which are thawed ones then cheese 3 times layering ending with cheese then took back of wooden spoon to make 5 holes threw the layers so the egg beaters i used would go down to bottem till it just covered it all going to wake up in 5 hours to checked it if its done will get back in morning to let u know how it went =0)
