crock pOTT recipe: Egg Brunch Casserole

When I found this recipe I was so amazed and excited at the same time.  Why hadn't I ever thought of this before???  A recipe for a breakfast casserole that you put in your crock pot.  Genius!!  Simply put all the ingredients in your crock pot before you go to bed a wake up to a perfectly cooked breakfast casserole.
This is great for when you are hosting house guest or when you just want a lazy morning.  Wake Up, Dish Up and eat.  (It doesn't get much quicker than that.)
Here is a recipe card with all the ingredients.  Just click and print and you too can make this tasty, quick and easy Egg Brunch Casserole.  Now just think of all the other things you can do in the morning since you won't have to worry about baking times.

what a perfect solution for Christmas morning!

I think I need to get a smaller crock pot...now that I'm cooking for 3 light eaters rather than a family of five, my six quart seems too big for that recipe. I'm excited to try it, though. Thanks for posting it.

I'm thinking Christmas morning, for those that want more than sweets, thanks!

I agree, this is brilliant. I've never heard of this. I am not very good when it comes to breakfast, so I like to make something ahead of time. This would be perfect.

Absolutely brilliant - nothing is worse than oversleeping and the casserole isn't done until almost lunch - not the I have ever done that LOL! I usually make mine with bread, I wonder if that would work? I have visions of Christmas breakfast with this idea! thanks for sharing with us at the Hearth and Soul Hop!

I don't think we could eat that much...can it be saved in the fridge and reheated or would that be gross?

OH I love how this goes in the crock pot!!!

I made this and while I was eating it, I thought it could use some sausage. So next time, there's gonna be sausage in it and it's going to rock! Great recipe.

Thank you for sharing this! I found it on Pinterest and made it for guests last weekend. It was so nice to have breakfast already made when we got up in the morning.

I found your blog as a result of pininterest and this recipe has just made my morning!!!!!!!!!!! Will try it for Sunday, mos'def!

This looks perfect for Christmas morning! Do you think skim milk would work, or does it have to be whole milk?

writeontheworld said...

What an amazing idea! I am SO lazy, I HAVE to try this sometime!

I'm going to try this. I usually assemble my casserole the night before and then it goes from the fridge to the oven. By the time toast or biscuits are done, coffee made, fruit, jams, jellies out, casserole is done. On Christmas morning it bakes while we explore the tree.

bethanndodd said...

Making this right now and I have a question...do you set the crockpot to low or high? I would assume low but I am known to be wrong sometimes ;) Thank you for the great recipe! Smiles~Beth

if you use turkey bacon, you eliminate the "cooking bacon" step...even easier!!

Hi ! Thank you so much for the recipe - would you consider putting recipes on the page also? (I keep my recipes digitally in Evernote, and the recipe card is almost too small to read) :)

I love this! Perfect!

Will this work in a 6qt oval crockpot? I don't have the size that's shown in the picture.

Anonymous said...

I'm going to double the recipe in my oval 6 quart. I will let everyone know how it goes. Fingers crossed!!!

Janet's House said...

OK. I'm set for Christmas morning. I also will be using the larger crock pot and would love to know if that will be ok. If I double it I'm afraid we'll be eating it for days (not really that bad I guess!)

Kelly Hickman said...

I made this for this morning and it was very good. I did use sausage instead of bacon and I agree... it could use a bit more salt, but very easy and yummy!!

Small Town Girl said...

Trying this for us and my parents for Christmas morning, putting it together right now! Thanks for sharing this one!

Mommy said...

just finished putting mine together... hope it's yummy

Mommy said...

I found that after 5 or so hours the edges were very brown. I turned it to the keep warm setting. I hope internally it's done. I just didn't want it to burn. I also used the oval crockpot

Mommy said...

Soo based on the bland comments I seasoned w/ salt and pepper every layer and i might of over seasoned now.. oh well it's still good. I had some salsa i put on it too.

Betsy said...

I made this last night/this morning and felt it was just so-so. I did not have whole milk and I wonder if that made a difference in it being a little dry. Also, the dill was a little over-powering and next time I will use different spices. As far as convenience this recipe is great! Loved waking up to the yummy smell of breakfast waiting on us...even if it was 5:15 am (thanks to eager kids ready to open Christmas presents!).

Anonymous said...

Can't wait to try this... I will mix up the spice and ingredients ever so slightly to suite our hungry crew.
Will make this for our hard working crew at work very soon! Nothing like a hot breakfast on a cold winter day! thank you :-)

Anonymous said...

I tried this last night/ this morning. It was good, but I will say that a 6 qt crockpot does not work very well for the amount of ingredients. It was done in less than 7 hours. Maybe it would be ok if I doubled the recipe. Thanks for sharing the recipe.

p2amela said...

I omitted the dill & added my favorite salsa (or you can add favorite salsa seasonings, ie; cumin, cayenne, etc...). Served it with a dollop of Greek Yogurt (or Sour Cream). This solved the "Bland" comments some had made.

Looks delicious! Is that 4 quart crock you're using?

Ok, so I need help. I tried this yesterday morning to take to a brunch and it was a fail! It was overcooked and tasteless. I was so sad! :( I just bought a new crock pot so that's not the issue. Is 8-10 hours on low really accurate? I wondered if it was too long before I cooked it. I cooked it for 9 hours. Thoughts?

This sounds wonderful! Can't wait to try it.

The recipe card format is too small, though. Could you re-size it?

I could see this on a camping trip!

Have this in the crock pot now...Used Jimmy Dean crumbles instead of bacon to save some time and dishes...Can't wait to try it in the morning!!! :D
