Ott, A's Fall Harvest Dinner

Last week I blogged about my fall dinner table and how it was all set and decorated with coordinating napkin rings and centerpieces.  Well several asked what was for dinner so today I am blogging about our meal and giving the recipes for each item I made. (some I have made in the past so you can click on the links to get the recipe for those.) Since October is National Pork Month I decided Pork Chops would be the main entre'.

Our pork chops came from a pig we purchased off a 4-H'er this summer after the county fair was over.  I have a dry rub that I patted onto the chops before placing on the grill.  The dry rub consists of salt, pepper, celery seed, garlic and onion powder.
Next, I made fresh applesauce from a combination of Gala and Honeycrisp apples.  (Nothing taste better than pork chops and applesauce.)


And, Corn Pudding as a side.  I made this recipe in a high school Home Ec. class and have used it as a go to side dish ever since.  It has such great flavor!!!

Corn Pudding Recipe:
1 pkg. Jiffy corn bread
1/2 cup melted margarine
3 eggs beaten
1-16oz can whole kernel corn
1-16oz can cream style corn
1 cup sour cream
1 cup shredded cheese

Preheat oven to 375 degrees.  Mix corn bread mix, margarine, eggs, whole kernel corn, cream style corn and sour cream in bowl.  Spoon into 1 1/2 qt. greased baking dish.  Top with cheese.  Bake 45 minutes.





All of this paired nicely with a bottle of Seyval Blanc from a local Indiana Winery, Mallow Run.  Seyval Blanc is a light, fruity wine with a nice aroma of apple, pear and a hint of pineapple. 

And for dessert we had an Applebutter Cake Roll, which has such a nice mix of spices it just gives you the feeling of fall, and was a nice way to finish off the evening meal.

Oooo that sounds heavenly & warm! Just a perfect meal that I would enjoy on a day with the weather like it is today. Actually my husband is at the store to get stuff for our first bout of chili for the season...it is that blustery :) But that whit pumpkin on your table is a gorgeous touch! I have a warm feeling just visiting you tonight! :)
