i canned a whole lOTT of salsa, now i'm baking easy chicken & cheese enchiladas

So this past summer I spent one afternoon canning about 15 jars of salsa.  Now anytime I want to whip up some mexican food for dinner I simply pull a jar off the shelf and open it.  Tonight I am making this Easy Chicken and Cheese Enchiladas.  It's really easy to make and Ott, E has told me numerous times that it taste better than any mexican food restaurant he's been to.

It's so easy you'll want to make some for yourself so here is a handy recipe card you can click on to make bigger and print it off to keep with your own recipes.

And for those of you interested in watching stretching your dollar I did some research on how much it cost me to make. (Please note since I used my own salsa I did not figure that into the costs.)

Cost for the recipe: $8.68
Cost per serving: $1.42

I am using some of the Salsa that we canned this summer. You have a great chicken cheese enchilada recipe, it makes me hungry for a Mexican dinner.

I love enchiladas but rarely make them. My brother loves them too, so I sometimes make them when he comes to visit since I can't eat them all myself. Thanks for your recipe. Always nice to have new versions to try.

Loved your enchiladas! My husband liked them even more, practically licked his plate. Thanks for the recipe. It was really easy and I made it with a bunch of stuff I already had on hand so it cost next to nothing!
