i canned a whole lOTT of apple butter, now i'm baking an apple butter cake roll

Back again this week with another "I canned a whole lOTT, now I'm baking in my Bistro" with yet another use for the applebutter I canned.  This time I baked an Apple Butter Cake Roll.  This is a great fall recipe which I found in a Taste of Home cookbook.  It has a nice spicy flavor to it.  In case you aren't familiar with a jelly roll style cake I took pictures and give step by step instructions on how to make this. 
First, though here's the recipe:
3 eggs, separated
1 cup all-purpose flour, divided
2 T. plus 1/2 cup sugar, divided
2 tsp. ground cinnamon
1 tsp. baking powder
1 tsp. ground ginger
1 tsp. ground cloves
1/4 tsp. baking soda
1/4 cup butter, melted
1/4 cup molasses
2 T. water
1 T. confectioners' sugar
2 cups apple butter
Place egg whites in a small mixing bowl; let stand at room temperature for 30 minutes. 

Line a greased 15 x 10 x 1 inch baking pan with waxed paper and greases the paper.  Sprinkle with 1 T. flour and 2 T. sugar; set aside.

 
In a large mixing bowl; combine remaining flour and sugar; add the cinnamon, baking powder, ginger, cloves and baking soda.  In another bowl, whisk the egg yolks, butter, molasses and water.  Add to dry ingredients and beat until soft peaks form; fold into batter.  Pour into prepared pan.

Bake at 375 degrees for 12-14 minutes or until cake springs back when lightly touched.  Cool for 5 minutes.  Turn cake onto a kitchen towel dusted with confectioners sugar.

Gently peel off waxed paper.

Roll up cake in the towel jelly roll style, starting with a short side. 

Cool completely on a wire rack.

Unroll cake; spread apple butter to within 1/2 inch of edges.  Roll up again.  Cover and chill for 1 hour before serving.  Refrigerate leftovers.  Yield: 10 servings.

This looks wonderful! My grandma used to make apple butter cake and we all LOVED it. Since she had no written recipes, I've kind of developed my own version and I made it this last summer for my parents 50th Anniversary celebration. All that to say, I never thought of doing it as a cake roll. Oh, I am going to try this soon :)

Okay, I did it, I made it tonight! Oh my was it soooo good! The only difference, mine turned out quite a bit darker than yours, not sure why, I guess it must be something with the molasses I used, it was really dark. This is not too sweet, and not too spicy, just the perfect compliment for spicy apple butter! I served another dessert, which ended up being awesome on top of this cake! I made Pumpkin Fluff, which you can find here

it was doubly good with the fluff on top. The fluff is not overly sweet (if you only add half the cool whip called for) and it is not overly pumpkin flavored either. It all complimented really well!! Thanks for sharing this recipe, it was a huge hit at my party tonight! I'll definitely be making it again! The fluff too!
