the forgOTTen art of food preservation: freezing zucchini

It is no secret....I enjoy freezing and canning food.  I like going to my pantry all fall and winter and eating off the produce we raised in our garden the previous summer.  It is so nice and handy to have jars or bags of produce ready and waiting to be enjoyed throughout the year.  But in order to eat Ott, E's favorite Chocolate Chip Zucchini Cake in the winter, I have to freeze zucchini in the summer.  So this past weekend I took some of the zucchini I had grown (and some that was given to me by a co-worker) and froze it. 
After picking and cleaning my zucchini, I pureed some in my food processor.









Then I measure it out into cups.










I put two cups in each ziplock freezer bag. Which I labeled with the name, date and amount. I then make sure to get as much of the air out of the bag as possible and make sure it is completely sealed. Then all I have to do is put it in my deep freezer.

Now anytime Ott, E is hungry for zucchini bread, zucchini cake or anything else I find to make with zucchini all I have to do is walk to my deep freeze, thaw out a bag and I will be a ready to go.

Is it sad that I froze a bunch of zucchini last year and actually had to throw it all out to empty out my freezer in order to make room for more frozen zucchini this year? I always think I will use it and then I don't! That cake sounds awesome though!!!

So many great ways to use zucchini, and you're so smart to freeze it up. How did I save anything before zip bags! Like you, I enjoy it year round. I need to post more about how I use it. Thanks for sharing your cake too.

I not a big zucchini eater, but my mother plants a garden in summer and cans for the winter. It is great to be able to have fresh butter beans and peas in the winter times.

Great ideas! We grew zucchinis in our garden this year and our little guy loves them.

I didn't know zucchinis froze well. Hopefully my plant will start to produce soon. I would love to be able to bake choc zuke cake in the winter. Thanks for the tip.

You're such an inspiration! I even have one of those vacuum sealers, so food lasts longer with air removed.

I kinda go in stages, tho. Right now, I'm outta the kitchen stage ;) Hubs is the main cook, thank goodness.
